20 large raw King Prawns with shells intact
1 Garlic clove, chopped
125g plum tomatoes, chopped
50g spanish leaves, tough stalks removed
50g watercress , tow stalks removed
1 tablespoon lemon juiceSalt and Pepper
Heat a large saucepan, spray it with the oil, add the prawns and garlic and season to taste, cover tightly and cook, shaking the pan from time to time for about 3 minutes or until the prawns are cooked.
Now add the tomatoes, rocket, sprinch and watercress and stair until whited. Squeeze over the lemon juice and check the seasoning.
Serve: Serve in hot with french bread if liked.
